  1. Get 1 large Aubergine eggplant
  2. Make ready 1-1/4 teaspoon salt

  1. Peel and slice the eggplant in 1/4 inch slices. Heat the oil.
  2. Add to a ziploc bag. Add the spices and flour shake the bag and coat each slice of eggplant.
  3. Dip into the beaten egg coat the slice with egg.
  4. Add the panko breadcrumbs to a plate and coat the slice with breadcrumbs
  5. Fry the slices of breaded eggplant in the oil turning as needed.
  6. Move to a paper towel to absorb excessive oils. Repeat the process till all the eggplant is fried.
