  1. Spatchcock the Chicken, and score to the bone.
  2. Peel & finely chop garlic. Zest & juice limes. Deseed and fine chop chillies.
  3. Mix garlic, zest & chillies together with tablespoon of olive oil. Rub into the chicken & marinade for 4 to 8 hours.
  4. Put honey, orange & 2/3 of lime juice in a pan a bring to the boil.
  5. Pre heat oven to 220f. Lay chicken in roasting tray skin side down. Cook for 20 mins. Turn chicken over and add honey & orange mix. Cook for further 40 mins at 180. Basting the chicken every 10 mins until caramelized.
  6. Cut the chicken up into portions. Legs in half and breast in half. Giving 8 nice pieces.
  7. Chunky chop tomatoes, cucumber & padron peppers. Add remaining lime juice & olive oil. Gently squeeze together.
  8. Chop coriander and add to salsa.
  9. Serve with your favourite fries. I like straw chips also spicy sweet potatoes are cool to. Enjoy
