  7. Take 10-12 Curry leaves
  8. Get 1/4 cup desiccated coconut

In this recipe, the beetroot is steamed and seasoned with mustard leaves, curry leaves, asafoetida and coconut. Sometimes we add finely chopped onions as well to give it an.   1. Heat oil in a pan.
  2. Once the oil is hot, add urad dal,, mustard seeds, let them crackle for a few seconds.
  3. Add green chilli, ginger and curry leaves and cook for another few seconds.
  4. Now add the beetroots. Mix well. Add the salt. Cover and cook on low heat for 8-10 minutes. The beetroots should be cooked al dente.
  5. Add desiccated coconut and mix well.

I prepare this poriyal often in my house. It is a very simple stir fry which goes well with rice. Serve as an accompainment with rice. Beet Greens are one of the healthiest greens for their low fat,no cholestral but having lots of health benefiting vitamins,minerals and anti-oxidants. The powdered peanuts gives an extra flavor and taste to this poriyal.
