The ingredients needed to make Marble Dhokla:
  1. Take 2 cups Sooji/Rava
  2. Take 1 1/2 Cup Curd
  3. Prepare 1 tbsp Green Chilli Ginger paste
  4. Prepare to taste Salt
  5. Make ready 2 tsp Eno
  6. Get as needed Oil for tempering and brushing
  7. Prepare 2 tsp Mustard Seeds for tempering
  8. Get 1 tsp sesame seeds for tempering (optional)
  9. Take 2 tsp Finely chopped Coriander leaves for garnishing
  10. Make ready as needed Water
  11. Take 1 Beetroot (for red color)
  12. Make ready handful coriandar leaves (for green color)
  13. Prepare 8-10 spinach leaves

Steps to make Marble Dhokla:
  1. Take a bowl, add Rava, curd, little water and mix. Keep this mixture aside for 15-20 minutes.
  2. In the meantime, make a fine paste of beetroot+water. Now grind spinach and coriander leaves with water to get smooth paste for green color.
  3. After 20 minutes, add some more water to Rava batter to give Dhokla batter like consistency.
  4. Divide the batter into 3 equal parts. Add beetroot puree to 1 part. Add spinach puree to other part. Mix it well.
  5. Add eno to all 3 batters and mix well untill it's fluffy and light.
  6. Now grease a plate in which you will make dhokla. Firstly add 1 ladle full of White batter, second add 1 ladleful of red batter and lastly add 1 ladleful of green batter. Again add 1 ladleful of White batter, second add 1 ladleful of red batter and lastly add 1 ladleful of green batter. Do not mix the batter. Repeat this process until the batter is finished.
  7. Now take a toothpick and draw design as per your choice.
  8. Heat a kadhai, add enough water for dhokla to steam. Place the plate/tray in the Kadhai, close the lid and let it steam on high flame for 15-20 minutes.
  9. One the Dhokla's are cooked, let it cool for 5 minutes.
  10. Now prepare for tempering. Take oil in a small pan, once it's hot, add mustard seeds and sesame seeds to the oil, let it splutter. Add tempering on the Dhokla. Garnish with fresh coriander leaves.
  11. Serve hot and enjoy with green chutney.
