This recipe has a punch of ginger and garlic, richness of onions, tanginess of yogurt, heat of chilies etc. Mix well and cover the pan with the lid so the gatte absorbs the curry flavors brilliantly. - Firstly, in a large kadai heat 2 tbsp oil and saute spices. add onion, chili,ginger garlic paste and saute to golden brown. - keeping the flame on low, add spices and saute well., add 1 cup water and 1 cup curd. stir continuously until the mixture comes to boil
- Now add prepare gatte (firstly, in a large bowl take besan, salt, mix well,add ajwain and curd, mix well making sure the dough turns moist.add water as required and knead the dough for 5 minutes. now pinch a ball sized dough and prepare cylindrical logs. in a large vessel boil 4 cups.. once the water comes to a boil, drop in prepared besan dough. boil for 10 minutes, without disturbing. drain off the gatte into a plate.
- Now cut the gatte into small pieces and keep aside). now add Salt. mix well. - cover and boil for 5 minutes. - additionally, add garam masala and 2 tbsp coriander. mix well. - finally, serve gatte ki sabji with roti, phulka or naan.
