The ingredients needed to make Spanish Omelette:
  1. Prepare 1 Potato (Large/2-Medium): 1 Cup- Chopped in Dices
  2. Make ready 1 Large Onion : 1 Cup- Sliced
  3. Make ready 1 Cup Cabbage/Cauliflower/Capsicums/Bell Peppers, etc. or any other veggies of your choice, depending on availability: (Copped in Dices)
  4. Take 1 Cup Tomatoes (Chopped in Dices)
  5. Get 1/2 tbsp Seasoning Herbs
  6. Prepare 1/2 tbsp or To Taste Salt
  7. Prepare 1/4 Cup Olive Oil (Preferably-EVOO)
  8. Take 3-4 Eggs
  9. Get 2 tbsp Fresh Milk
  10. Get 1 tsp Black Pepper Powder
  11. Take 1 tsp White Pepper Powder
  12. Get 1/2-1 Cup Grated Cheese (Optional)
  13. Take as required Coriander Leaves: (Freshly & Finely Chopped)
Instructions to make Spanish Omelette:
  1. Take a large frying pan and heat it on the medium flame, adding in the measured oil- Once hot, add in the Diced potatoes first & sauté for about a couple of minutes until light golden brown
  2. Then goes in the Sliced Onions keep sautéing for another 1-2 mins time by adding in the Salt to it…sauté until it’s translucent
  3. Now, at this point- Add in the rest other veggies you’ve, one after the other & stir fry for sometime then, cover the lid of the pan- reduce the flame to low & cook the veggies for about 7-10 mins time until soft & well cooked
  4. Open the lid and checkout if everything’s well cooked now… Put off the flame & take out the same in a separate bowl
  5. In another bowl- Break the eggs, add in some salt (salt has been used before while frying the veggies hence be careful so as not to make it too salty & spoil it) and black & white pepper powders & whisk it well & add in the chopped coriander leaves (optional)
  6. Now, pour in the half cooled down but still need be warm enough- Already cooked veggies & mix everything together until well combined- once the slightly hot/warm veggies are added into the egg batter, it’the start thickening a bit & that’s exactly what’s required for this type of omelette
  7. Now, pour in the entire content in the heated pan again over a low-medium heat and cook for about 5 mins (this is required for each side) & also add in the grated cheese (optional)
  8. Now, once one side’s done very carefully & gently flip it onto it's other side by placing a ceramic or porcelain big plate on the top of the pan and then do it immediately and then again, slide the same onto the heated pan again, for the other side of it to get equally cooked for another 5 mins time
  9. With the back of your spatula- tuck the sides of the omelette to get it's legendary roundish shape and once it’s all done and well cooked, transfer it onto the Serving Dish…& Our Legendary “Tortilla De Patata” or commonly known as the “Spanish Omelets” is ready to grab now
