Sandwich dhokla is spicer version of White Dhokla, made from rice and udad dal. Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states.   1. Rava dhokla - In bowl combine all things except lemon juice and fruit salt.Make a smooth thick batter and keep aside.
  2. Besan dhokla - In another bowl,sift besan,add all ingredients except lemon juice and eno fruit salt.Make a thick smooth batter and whisk it nicely. Keep aside. - Heat steamer. grease dhokla plate or a cake tin.Now add lemon juice and eno fruit salt in rava mixture and give a nice mix and pour immediately in greased tin.
  3. Immediately cover the lid and steam for 5-6 minute. Remove lid and spread chutney (chutney should be thick).Cover the lid and steam for 5-6 min.after 5-6 min again remove from steamer.
  4. Add lemon juice and eno in besan mixture and pour over the chutney layer. Cover the lid again and let steam for 14 minute. Insert toothpick to chk..if clear it's means ready if not cook for 5 min. More.Remove from steamer and let it cool down.
  5. Unmould it in serving dish.prepare water syrup.in pan add water and sugar. Boil it - add lemon juice in it.pour this syrup on warm dhokla. Let it sit in half an hour. Prepare the tempring.Heat oil,add mustard seeds, curry leaves and green chilli. Pour it over dhokla. Cut into pieces and serve with chutney. It will go very gud with sweet chutney.garnish with coconut powder.
