- Cut both edges of shim. Remove strings from both sides.Steam cook or boil for 5 minutes.It should be just done and should not be mushy..Grind to a paste sesame and mustard seed with 1 green chilli and 2 tbsp chopped coriander.Add coconut and coarsely grind it.Coconut can also be scraped.
- Heat 1 tbsp mustard oil in a wok.Sprinkle kalonji.When they crackle add the parboiled beans and fry.Add the ground paste,salt and sugar to taste.Also add 1 chopped green chilli if needed.Toss all.Add the boiled stock if any plus 1/4th cup water and cook till masala coats the beans.Sprinkle 1/2 tbsp mustard oil.Garnish with chopped coriander and 1 red chilli.Serve with rice.
