- Cut open the coconut, remove the cover and cut the fruit in small pieces. Grind coconut by adding some water.
- Sieve the crushed mixture.
- Repeat again by adding the shreds in mixer with water. Use 2 cups in this recipe. Freeze the leftover for later use.
- Wash and Soak rice for 15 minutes.
- In a wok heat oil and add cauliflower florets and saute till they are a little soft.
- Crush pepper corns and cumin seeds
- In a pressure cooker pan, heat ghee add whole spices.
- Add crushed cumin-pepper.
- Saute for few seconds.
- Add rice, turmeric and cumin powder.
- Add salt to the rice.
- Add 2 cups of coconut milk.
- Once the mixture starts to boil, add the sauteed cauliflower.
- Mix everything and close the cooker lid. Switch off flame before 1 whistle.
- They are done. As rice was soaked for 15 minutes, it cooks really fast. Do not leave the rice unattended or else it may get burnt from the bottom.
- Add chopped mint leaves.
- Serve hot with some curd or chutney, or just as is.
